Instructions

Prepare the Dough

  1. 1In a small bowl, combine warm water, yeast, and sugar. Let it sit for 5-10 minutes until foamy.
  2. 2In a large bowl, whisk together flour and salt. Create a well in the center.
  3. 3Pour the activated yeast mixture, lukewarm milk, and melted butter into the well. Mix until a shaggy dough forms.
  4. 4Turn the dough out onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic.
  5. 5Place the dough in a lightly oiled bowl, cover with plastic wrap or a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Assemble the Scrolls

  1. 1Punch down the risen dough. On a lightly floured surface, roll the dough into a rectangle, approximately 12x18 inches.
  2. 2Spread the Vegemite evenly over the dough, leaving a small border along one of the long edges.
  3. 3Sprinkle the grated cheddar cheese evenly over the Vegemite.
  4. 4Starting from the long edge with the Vegemite and cheese, tightly roll up the dough. Pinch the seam to seal.
  5. 5Cut the log into 12 equal slices, about 1.5 inches thick.

Bake the Scrolls

  1. 1Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.
  2. 2Arrange the scrolls cut-side up on the prepared baking sheet, leaving some space between them.
  3. 3If using, whisk together the egg and milk for the egg wash and brush it over the tops of the scrolls.
  4. 4Bake for 20-25 minutes, or until golden brown and cooked through.
  5. 5Let the scrolls cool slightly on a wire rack before serving.

Tips

  • Ensure your yeast is active for a good rise; test it in warm water with a pinch of sugar.
  • Don't overmix the dough after adding the liquids; knead until just smooth to avoid tough scrolls.
  • These scrolls are best enjoyed warm, but also make a fantastic cold snack.
