Stew Preparation

  1. 1Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.
  2. 2Add the cremini and shiitake mushrooms. Cook, stirring occasionally, until browned and tender, about 8-10 minutes. Remove mushrooms from the pot and set aside.
  3. 3Add the chopped onion to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant. Do not burn the garlic.
  4. 4Add the carrots, parsnips, and celery root to the pot. Stir well to combine with the onions and garlic.
  5. 5Pour in the vegetable broth. Add the bay leaves, fresh thyme, and fresh rosemary to the pot.
  6. 6Return the cooked mushrooms to the pot. Season with salt and freshly ground black pepper to taste. Stir everything together.
  7. 7Bring the stew to a boil, then reduce the heat to low, cover, and simmer for at least 60-75 minutes, or until the root vegetables are tender and the flavors have melded.
  8. 8Remove the bay leaves before serving. Taste and adjust seasoning with salt and pepper if needed.
