Brew Preparation

  1. 1Heat olive oil in a large pot or Dutch oven over medium-high heat.
  2. 2Add the turkey thigh pieces and brown them on all sides. Remove the turkey and set aside.
  3. 3Add the sliced leeks to the pot and cook until softened, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  4. 4Return the browned turkey to the pot. Add the cubed celery root and potatoes.
  5. 5Pour in the chicken broth. Add the chopped rosemary, thyme (if using), and bay leaf.
  6. 6Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 45-60 minutes, or until the vegetables are tender and the turkey is cooked through.
  7. 7Remove the bay leaf. Season generously with salt and freshly ground black pepper to taste.
