- 1 1/2lb turkey thighs(boneless, skinless, cut into 1-inch pieces (or chicken thighs))
Vegetables
- 3 pcs leeks(white and light green parts only, washed and sliced)
- 1lb celery root(peeled and cut into 1-inch cubes)
- 1lb potatoes(peeled and cut into 1-inch cubes (Yukon Gold or red potatoes recommended))
- 4 pcs garlic(cloves, minced)
Liquids & Seasonings
- 6 cup chicken broth(low-sodium)
- 2 tsp rosemary(fresh, chopped)
- 1 tsp thyme(fresh, chopped (optional))
- 1 pc bay leaf
- 2 tbsp olive oil
- salt(to taste)
- black pepper(freshly ground, to taste)
Instructions
Brew Preparation
- Heat olive oil in a large pot or Dutch oven over medium-high heat.
- Add the turkey thigh pieces and brown them on all sides. Remove the turkey and set aside.
- Add the sliced leeks to the pot and cook until softened, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant.
- Return the browned turkey to the pot. Add the cubed celery root and potatoes.
- Pour in the chicken broth. Add the chopped rosemary, thyme (if using), and bay leaf.
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 45-60 minutes, or until the vegetables are tender and the turkey is cooked through.
- Remove the bay leaf. Season generously with salt and freshly ground black pepper to taste.
