Ingredients

Proteins

  • 1 1/2lb turkey thighs(boneless, skinless, cut into 1-inch pieces (or chicken thighs))

Vegetables

  • 3 pcs leeks(white and light green parts only, washed and sliced)
  • 1lb celery root(peeled and cut into 1-inch cubes)
  • 1lb potatoes(peeled and cut into 1-inch cubes (Yukon Gold or red potatoes recommended))
  • 4 pcs garlic(cloves, minced)

Liquids & Seasonings

  • 6 cup chicken broth(low-sodium)
  • 2 tsp rosemary(fresh, chopped)
  • 1 tsp thyme(fresh, chopped (optional))
  • 1 pc bay leaf
  • 2 tbsp olive oil
  • salt(to taste)
  • black pepper(freshly ground, to taste)

Instructions

Brew Preparation

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add the turkey thigh pieces and brown them on all sides. Remove the turkey and set aside.
  3. Add the sliced leeks to the pot and cook until softened, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  4. Return the browned turkey to the pot. Add the cubed celery root and potatoes.
  5. Pour in the chicken broth. Add the chopped rosemary, thyme (if using), and bay leaf.
  6. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 45-60 minutes, or until the vegetables are tender and the turkey is cooked through.
  7. Remove the bay leaf. Season generously with salt and freshly ground black pepper to taste.
