- 2lb beef chucks(cut into 1-inch cubes)
- 1lb pork shoulder(cut into 1-inch cubes)
- 4 pcs carrots(peeled and chopped)
- 2 pcs parsnips(peeled and chopped)
- 3 pcs celery stalks(chopped)
- 1 pc yellow onion(chopped)
- 4 pcs garlic cloves(minced)
- 4 cup beef broth
- 4 pcs thyme sprigs
- 2 pcs bay leaves
- 2 tbsp all-purpose flour(for dredging)
- 2 tbsp vegetable oil
- 1 tsp salt(or to taste)
- 1/2 tsp black pepper(or to taste)
Instructions
Stew Preparation
- In a shallow dish, toss the beef and pork cubes with flour, salt, and pepper until evenly coated.
- Heat vegetable oil in a large skillet over medium-high heat. Brown the floured meat in batches, don't overcrowd the pan. Remove browned meat and set aside.
- Add the chopped onion, carrots, parsnips, and celery to the same skillet and cook until softened, about 5-7 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Transfer the browned meat, sautéed vegetables, beef broth, thyme sprigs, and bay leaves to a slow cooker.
- Cover and cook on low for 8 hours or on high for 4-5 hours, until the meat is tender and the vegetables are cooked through.
- Remove thyme sprigs and bay leaves before serving.
