Baking Instructions

  1. 1Preheat your oven to 160°C (140°C fan/320°F). Line two baking sheets with parchment paper.
  2. 2In a large bowl, combine the rolled oats, flour, sugar, cinnamon, ginger, and salt. Stir well to distribute the spices evenly.
  3. 3In a small saucepan, melt the butter and golden syrup over low heat. Do not boil. Once melted, remove from heat.
  4. 4Pour the melted butter and syrup mixture into the dry ingredients. Add the citrus zest. Mix until just combined. The mixture will be crumbly.
  5. 5Stir in the boiling water. This step helps to activate the baking soda and create a slightly chewier texture. The dough will come together.
  6. 6Roll the dough into small balls, about the size of a walnut, and place them onto the prepared baking sheets, leaving about 5 cm (2 inches) between each biscuit. Flatten each ball slightly with the palm of your hand or the bottom of a glass.
