Making Uzvar
- 1In a large pot, combine the rinsed dried apples, prunes, and pears (if using) with 2.5 liters of water.
- 2Add the cinnamon stick and cloves to the pot.
- 3Bring the mixture to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for at least 60 minutes, or until the fruits are tender.
- 4Remove the pot from the heat. Stir in the honey until dissolved. Add the lemon balm.
- 5Let the uzvar steep for another 10-15 minutes with the lid on.
- 6Strain the uzvar through a fine-mesh sieve, discarding the solids. Allow it to cool completely.
