Instructions

Making the Uzvar

  1. 1Combine the rinsed dried apricots, dried peaches, water, honey, orange peel, and lemon peel in a large pot.
  2. 2Bring the mixture to a boil over medium-high heat.
  3. 3Once boiling, reduce the heat to low, cover the pot, and let it simmer for 45 minutes.
  4. 4Remove the pot from the heat and let it steep, covered, for at least another 15-20 minutes to allow the flavors to meld.
  5. 5Strain the uzvar through a fine-mesh sieve into a pitcher, pressing gently on the fruit to extract more liquid. Discard the fruit and peels.
  6. 6Allow the strained uzvar to cool completely at room temperature.
  7. 7Once cooled, stir in the fresh mint leaves. For a stronger mint flavor, lightly muddle the mint before adding.
  8. 8Refrigerate the uzvar for at least 2-3 hours, or until thoroughly chilled.

Serving

  1. 1Fill glasses with ice cubes.
  2. 2Pour the chilled uzvar over the ice.
  3. 3Garnish each glass with a few fresh mint sprigs.
