Chill and Citrus Uzvar Refresher

Uzvar

Ingredients

Uzvar Base

  • 1 cup dried apricots(rinsed)
  • 1 cup dried peaches(rinsed)
  • 8 cup water
  • 1/2 cup honey(or to taste)
  • 2 pcs orange peel(from 1 large orange, use a peeler to get wide strips)
  • 1 pc lemon peel(from 1 lemon, use a peeler to get wide strips)

For Serving

  • 1 cup fresh mint leaves(packed, plus extra for garnish)
  • ice cubes

Instructions

Making the Uzvar

  1. Combine the rinsed dried apricots, dried peaches, water, honey, orange peel, and lemon peel in a large pot.
  2. Bring the mixture to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 45 minutes.
  4. Remove the pot from the heat and let it steep, covered, for at least another 15-20 minutes to allow the flavors to meld.
  5. Strain the uzvar through a fine-mesh sieve into a pitcher, pressing gently on the fruit to extract more liquid. Discard the fruit and peels.
  6. Allow the strained uzvar to cool completely at room temperature.
  7. Once cooled, stir in the fresh mint leaves. For a stronger mint flavor, lightly muddle the mint before adding.
  8. Refrigerate the uzvar for at least 2-3 hours, or until thoroughly chilled.

Serving

  1. Fill glasses with ice cubes.
  2. Pour the chilled uzvar over the ice.
  3. Garnish each glass with a few fresh mint sprigs.
