Instructions
Making the Uzvar
- 1Combine the rinsed dried apricots, dried peaches, water, honey, orange peel, and lemon peel in a large pot.
- 2Bring the mixture to a boil over medium-high heat.
- 3Once boiling, reduce the heat to low, cover the pot, and let it simmer for 45 minutes.
- 4Remove the pot from the heat and let it steep, covered, for at least another 15-20 minutes to allow the flavors to meld.
- 5Strain the uzvar through a fine-mesh sieve into a pitcher, pressing gently on the fruit to extract more liquid. Discard the fruit and peels.
- 6Allow the strained uzvar to cool completely at room temperature.
- 7Once cooled, stir in the fresh mint leaves. For a stronger mint flavor, lightly muddle the mint before adding.
- 8Refrigerate the uzvar for at least 2-3 hours, or until thoroughly chilled.
Serving
- 1Fill glasses with ice cubes.
- 2Pour the chilled uzvar over the ice.
- 3Garnish each glass with a few fresh mint sprigs.
