Instructions

Making the Damper

  1. 1Preheat your oven to 200°C (180°C fan/400°F/Gas Mark 6). Lightly grease a baking tray or line with baking paper.
  2. 2In a large bowl, whisk together the self-raising flour, salt, ground wattle seed, and chopped lemon myrtle leaves.
  3. 3Add the cold cubed butter to the dry ingredients. Using your fingertips or a pastry blender, rub the butter into the flour mixture until it resembles coarse breadcrumbs.
  4. 4Gradually pour in the milk, mixing with a knife or your hands until a soft, slightly sticky dough forms. Be careful not to overmix.
  5. 5Turn the dough out onto a lightly floured surface. Gently knead for just a few seconds to bring it together. Shape it into a round, flattened loaf, about 4-5 cm thick.
  6. 6Place the shaped damper onto the prepared baking tray. You can lightly score the top with a knife if desired.
  7. 7Bake in the preheated oven for 30-35 minutes, or until the damper is golden brown and sounds hollow when tapped on the bottom.
  8. 8Transfer the damper to a wire rack to cool slightly before serving.
