- 2 pcs zucchini(medium, thinly sliced)

- 1/2 cup feta cheese(crumbled)
- 2 tbsp fresh basil(chopped, for garnish)
Instructions
Prepare the Tart
- Preheat your oven to 400°F (200°C).
- Unroll the puff pastry sheet onto a parchment-lined baking sheet. Score a 1-inch border around the edge of the pastry, being careful not to cut all the way through.
- In a large bowl, toss the sliced eggplant, zucchini, bell peppers, and tomatoes with olive oil, minced garlic, dried oregano, salt, and black pepper until well combined.
Assemble and Bake
- Arrange the mixed vegetables decoratively within the scored border of the puff pastry, overlapping them slightly to create a visually appealing pattern.
- Bake for 35-40 minutes, or until the pastry is golden brown and puffed, and the vegetables are tender. If the pastry border browns too quickly, you can loosely cover it with foil.
- Remove the tart from the oven and immediately sprinkle the crumbled feta cheese over the hot vegetables.
