Ingredients
- 14oz mushrooms(cleaned and sliced (cremini or button))
- 8oz halloumi(sliced into 6–8 mm slabs)
- 4 pcs pita bread(soft pita pockets or flatbreads, warmed)
- 2 tbsp olive oil(for sautéing mushrooms and frying halloumi)
- 1 tsp garlic(minced)
- 1 pc lemon(juiced, for finishing)
Sauce & garnishes
- 1 cup tzatziki(store-bought or homemade)
- 1 pc cucumber(thinly sliced or grated, seeded if large)
- 2 pcs tomato(medium, sliced)
- 1 pc red onion(small, thinly sliced)
- 1 tsp dried oregano(for seasoning)
- 1 tsp salt(plus extra to taste)
- 1/2 tsp black pepper(freshly ground)
Instructions
Prepare
- Slice mushrooms, halloumi, tomato and red onion; thinly slice or grate the cucumber and juice the lemon.
- Warm the pita in a dry skillet over low heat or wrap in foil and heat in a low oven until pliable.
- Mix tzatziki with a squeeze of lemon and a pinch of salt if desired, set aside.
Cook
- Heat 1 tbsp olive oil in a large skillet over medium-high heat; add mushrooms, a pinch of salt and the minced garlic.
- Sauté mushrooms until browned and any liquid has evaporated, about 6–8 minutes; finish with a sprinkle of dried oregano and black pepper, then remove from pan.
- Wipe the skillet, add remaining 1 tbsp olive oil, and fry halloumi slices 2–3 minutes per side until golden and slightly crisp.
Assemble
- Spread 2–3 tbsp tzatziki down the center of each warm pita.
- Divide mushrooms and halloumi evenly among pitas, top with sliced tomato, cucumber and red onion.
- Finish with a squeeze of lemon and an extra sprinkle of oregano, fold or roll the pita and serve immediately.
