Ingredients

  • 28oz ripe tomatoes(crushed or diced)
  • 4 pcs garlic(cloves, minced)
  • 1 pc onion(medium, finely chopped)
  • 1/4 cup fresh parsley(chopped)
  • 1/4 cup fresh basil(chopped)
  • 1 qt vegetable broth
  • 2 tbsp olive oil
  • 1/2 tsp sugar(optional, to balance acidity)
  • salt(to taste)
  • black pepper(to taste)

Instructions

Preparation

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add chopped onion and sauté for 5-7 minutes until softened and translucent.
  3. Stir in the minced garlic and cook for another 1-2 minutes until fragrant, being careful not to burn it.

Cooking the Broth

  1. Pour in the crushed or diced tomatoes and vegetable broth. Add the sugar, if using, and bring the mixture to a gentle boil.
  2. Reduce heat to low, cover, and let it simmer for at least 30-40 minutes, stirring occasionally, to allow the flavors to meld.
  3. Remove from heat and stir in the fresh parsley and basil. Season with salt and black pepper to taste.
  4. Optionally, for a smoother broth, use an immersion blender to blend a portion of the soup, or pass it through a sieve.

Serving

  1. Ladle the hot Brodu tat-Tadam into bowls. Serve immediately, garnished with extra fresh herbs if desired.
