- 9oz caster sugar
- 4 pcs large eggs
- 2 tbsp orange blossom water
- 1 tbsp lemon zest(from one lemon)

Preparation
- Preheat your oven to 160°C (325°F). Grease and flour an 8-inch (20 cm) round cake tin or line with parchment paper.
Making the Cake Batter
- In a large mixing bowl, combine the ground almonds, caster sugar, and baking powder. Mix well until everything is evenly distributed.
- In a separate bowl, whisk the eggs lightly. Add the orange blossom water, lemon zest, and vanilla extract to the beaten eggs and mix.
- Pour the wet ingredients into the dry almond mixture. Mix gently with a spatula until just combined. Be careful not to overmix, as this can make the cake tough.
Baking
- Pour the cake batter into the prepared cake tin, spreading it evenly.
