Instructions
Prepare Tartlet Shells
- 1Preheat oven to 400°F (200°C). Lightly grease mini muffin tins or tartlet molds.
- 2Unfold the puff pastry sheet and cut out circles slightly larger than the tartlet molds. Gently press the pastry circles into the molds.
- 3Prick the bottom of each pastry shell with a fork a few times.
- 4Brush the edges of the pastry shells with the beaten egg wash.
- 5Bake for 12-15 minutes, or until golden brown and puffed.
- 6Remove from oven and let cool slightly in the tins before removing them to a wire rack to cool completely.
Make Shrimp Filling
- 1In a medium bowl, combine the cooked, chopped shrimp, crème fraîche, mayonnaise (if using), chopped dill, and lemon juice.
- 2Season with salt and freshly ground black pepper to taste. Stir gently to combine.
Assemble Tartlets
- 1Just before serving, spoon the shrimp filling evenly into the cooled tartlet shells.
- 2Garnish each tartlet with a small sprig of fresh dill.
- 3Arrange the Toast Skagen Tartlets on a platter with lemon wedges on the side.

Tips
- Ensure puff pastry is fully thawed but still cold before working with it for best results and flaky layers.
- Serve these tartlets immediately after filling to maintain the crispness of the pastry shells.
- Chop the dill finely to ensure an even distribution of flavor throughout the shrimp mixture.
