Instructions

Prepare Tartlet Shells

  1. 1Preheat oven to 400°F (200°C). Lightly grease mini muffin tins or tartlet molds.
  2. 2Unfold the puff pastry sheet and cut out circles slightly larger than the tartlet molds. Gently press the pastry circles into the molds.
  3. 3Prick the bottom of each pastry shell with a fork a few times.
  4. 4Brush the edges of the pastry shells with the beaten egg wash.
  5. 5Bake for 12-15 minutes, or until golden brown and puffed.
  6. 6Remove from oven and let cool slightly in the tins before removing them to a wire rack to cool completely.

Make Shrimp Filling

  1. 1In a medium bowl, combine the cooked, chopped shrimp, crème fraîche, mayonnaise (if using), chopped dill, and lemon juice.
  2. 2Season with salt and freshly ground black pepper to taste. Stir gently to combine.

Assemble Tartlets

  1. 1Just before serving, spoon the shrimp filling evenly into the cooled tartlet shells.
  2. 2Garnish each tartlet with a small sprig of fresh dill.
  3. 3Arrange the Toast Skagen Tartlets on a platter with lemon wedges on the side.
