Instructions

Prepare the Batter

  1. 1In a medium bowl, combine the semolina, warmed milk, egg, sugar, and a pinch of salt. Whisk until smooth. The batter should be thick but pourable.
  2. 2Let the batter rest for about 10-15 minutes to allow the semolina to absorb some liquid and thicken.

Form the Dumplings

  1. 1Bring a large pot of lightly salted water to a rolling boil.
  2. 2Using two spoons dipped in hot water, scoop portions of the batter and gently drop a strawberry into the center of each. Cover the strawberry with more batter, forming a rough ball, and carefully slide it into the boiling water.
  3. 3Work in batches to avoid overcrowding the pot. Ensure dumplings are fully submerged.

Cook the Dumplings

  1. 1Reduce the heat slightly to maintain a gentle boil. Cook the dumplings for about 6-8 minutes, or until they float to the surface and are cooked through. Gently turn them halfway through cooking if needed.
  2. 2Once cooked, carefully remove the dumplings from the water using a slotted spoon.

Serve

  1. 1Serve the warm strawberry dumplings immediately.
  2. 2Top each serving with a dollop of sweetened quark or Greek yogurt and a drizzle of honey. Dust with powdered sugar if desired.

Tips

  • Ensure your semolina batter is of the right consistency – thick enough to hold its shape but still pourable.
  • Do not overcrowd the pot when boiling the dumplings to ensure even cooking and prevent them from sticking.
  • Sweetened quark is traditional, but thick Greek yogurt or even a light vanilla custard makes a delicious alternative.
