Prepare the Cheese

  1. 1Set up three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs.
  2. 2Dredge each cube of edam cheese first in flour, then dip into the beaten eggs, and finally coat thoroughly with breadcrumbs.
  3. 3Place the coated cheese cubes on a plate and refrigerate for at least 10 minutes to help the coating set.

Fry the Cheese

  1. 1Heat about 2-3 inches of vegetable oil in a deep pot or dutch oven over medium-high heat until it reaches 350°F (175°C).
  2. 2Carefully add the cheese cubes in batches, ensuring not to overcrowd the pot. Fry for 2-3 minutes, or until golden brown and crispy.
  3. 3Remove the fried cheese bites with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.

Make the Glaze and Toss

  1. 1In a small bowl, whisk together sriracha, lime juice, honey, and garlic powder until well combined.
  2. 2In a clean bowl, gently toss the warm fried cheese bites with the sriracha-lime glaze until evenly coated.
  3. 3Transfer the glazed cheese bites to a serving platter and garnish with chopped fresh cilantro.
