Instructions

Prepare and Sear Beef

  1. 1Pat dry the beef cubes with paper towels and season generously with salt and black pepper. Toss the beef cubes with the flour until evenly coated.
  2. 2Heat the vegetable oil in a large skillet over medium-high heat. Brown the beef cubes in batches on all sides. Do not overcrowd the pan. Transfer browned beef to the slow cooker.

Build the Gulasz

  1. 1Add the sliced onions to the same skillet and cook over medium heat until softened and lightly browned, about 8-10 minutes. Add the minced garlic and cook for another minute until fragrant.
  2. 2Stir in the sweet paprika, smoked paprika, crushed caraway seeds, and dried marjoram. Cook for 30 seconds, stirring constantly, until fragrant.
  3. 3Add the tomato paste to the skillet and stir to combine with the spices and onions. Cook for 1 minute.
  4. 4Pour in the beef broth and scrape the bottom of the skillet to deglaze, loosening any browned bits. Bring to a simmer.
  5. 5Pour the onion and spice mixture over the beef in the slow cooker. Stir to coat the beef evenly.

Slow Cook

  1. 1Cover the slow cooker and cook on low for 7-8 hours, or on high for 3-4 hours, until the beef is very tender and easily shreds.
  2. 2Once cooked, skim off any excess fat from the surface of the gulasz, if desired. Taste and adjust seasoning with salt and pepper as needed.

Serve

  1. 1Serve the Slow Cooker Polish Gulasz hot over egg noodles or mashed potatoes. Garnish with a dollop of sour cream (if using) and a sprinkle of fresh parsley and extra paprika.
