  3. 3Prepare the filling by mixing the rehydrated shiitake mushrooms, diced bacon, and sliced chinese sausage. set aside.

Assembly and Cooking

  1. 1Remove the chicken from the marinade, reserving any excess marinade. pat the chicken dry.
  2. 2Stuff the cavity of the chicken with the prepared filling ingredients.
  3. 3Lay out two rehydrated lotus leaves on a clean surface, overlapping them slightly to form a large rectangular wrap. place the stuffed chicken in the center.
  4. 4Wrap the chicken tightly with the lotus leaves, ensuring it is completely enclosed. you may need to use kitchen twine to secure the package.
  5. 5Place the wrapped chicken in the slow cooker. pour any reserved marinade liquid around the chicken.
