Ingredients
- 6 pcs chicken thighs(boneless, skinless, cut into bite-sized pieces)
- 7oz lotus root(peeled and thinly sliced)
- 5oz shiitake mushrooms(fresh, stemmed and sliced)
- 2 tbsp shaoxing wine
- 1 tbsp ginger(minced)
- 3 tbsp garlic(minced)
- 3 tbsp soy sauce
- 2 tbsp oyster sauce
- 1 tsp sesame oil
- 1 cup chicken broth
- 1 tbsp cornstarch(mixed with 2 tbsp water to form a slurry)
- 2 pcs scallions(chopped, for garnish)
- 2 tbsp cooking oil
Instructions
Marinating the Chicken
- In a bowl, combine the chicken thighs with shaoxing wine, minced ginger, minced garlic, soy sauce, oyster sauce, and sesame oil. Mix well and let it marinate for at least 20 minutes.
Preparing the Casserole
- Heat cooking oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook until browned on all sides.
- Add the sliced lotus root and shiitake mushrooms to the skillet. Stir-fry for 2-3 minutes until slightly softened.
- Pour in the chicken broth and bring the mixture to a simmer. Cover and cook for about 45 minutes, or until the chicken is tender and cooked through.
- Stir in the cornstarch slurry to thicken the sauce. Cook for another 1-2 minutes until the sauce has a glossy consistency.
- Transfer the mixture to a casserole dish.
Baking and Serving
- Preheat oven to 180°C (350°F).
- Bake the casserole for 15-20 minutes, or until the top is lightly golden and bubbly.
- Garnish with chopped scallions before serving.
