Instructions

Marinating the Chicken

  1. 1In a bowl, combine the chicken thighs with shaoxing wine, minced ginger, minced garlic, soy sauce, oyster sauce, and sesame oil. Mix well and let it marinate for at least 20 minutes.

Preparing the Casserole

  1. 1Heat cooking oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook until browned on all sides.
  2. 2Add the sliced lotus root and shiitake mushrooms to the skillet. Stir-fry for 2-3 minutes until slightly softened.
  3. 3Pour in the chicken broth and bring the mixture to a simmer. Cover and cook for about 45 minutes, or until the chicken is tender and cooked through.
  4. 4Stir in the cornstarch slurry to thicken the sauce. Cook for another 1-2 minutes until the sauce has a glossy consistency.

Baking and Serving
