Crust
- 1 pc pie crust(9-inch, pre-made or homemade)
Filling
- 6oz bacon(diced)
- 2 pcs onions(medium, thinly sliced)
- 4 pcs eggs(large)
- 1 1/2 cup heavy cream
- 1 1/2 cup emmental cheese(shredded (or Gruyère))
- 1/2 tsp salt
- 1/4 tsp black pepper(freshly ground)
- 1/8 tsp nutmeg(ground)
- 1 tbsp butter

Preparation
- Preheat your oven to 375°F (190°C). Place the pie crust in a 9-inch pie plate. Crimp the edges as desired.
- In a large skillet, cook the diced bacon over medium heat until crispy. Remove bacon with a slotted spoon and set aside, reserving 1 tablespoon of bacon fat in the pan.
- Add 1 tablespoon of butter and the thinly sliced onions to the skillet. Cook over medium-low heat, stirring occasionally, for 20-25 minutes, or until deeply golden brown and caramelized.
Assembly and Baking
- Sprinkle half of the shredded Emmental cheese evenly over the bottom of the pie crust.
- Distribute the cooked bacon and caramelized onions over the cheese in the pie crust.
- In a medium bowl, whisk together the eggs, heavy cream, salt, pepper, and nutmeg until well combined.
- Carefully pour the egg mixture over the bacon, onions, and cheese in the pie crust.
- Sprinkle the remaining shredded Emmental cheese over the top of the quiche.
- Bake for 45-55 minutes, or until the center is just set and the top is golden brown. A knife inserted near the center should come out clean.
- Remove from the oven and let the quiche cool on a wire rack for at least 10-15 minutes before slicing and serving. This allows the custard to fully set.
