Instructions

Prepare the Chips

  1. 1Preheat oven to 425°F (220°C). Line two baking sheets with parchment paper.
  2. 2In a large bowl, toss the cut potatoes with olive oil, salt, and pepper until evenly coated.
  3. 3Spread the potatoes in a single layer on one of the prepared baking sheets.
  4. 4Bake for 30-35 minutes, flipping halfway through, until golden brown and crispy.

Prepare the Fish

  1. 1While the chips are baking, prepare the fish coating. In a shallow dish, combine panko breadcrumbs, grated parmesan cheese, paprika, salt, and pepper.
  2. 2In another shallow dish, whisk the eggs.
  3. 3Pat the cod fillets dry with paper towels. Brush each fillet lightly with olive oil.
  4. 4Dip each cod fillet first into the beaten egg, letting excess drip off, then press firmly into the panko mixture, ensuring it's fully coated on all sides.
  5. 5Place the coated fish fillets on the second prepared baking sheet.
  6. 6Bake for 15-20 minutes, or until the fish is opaque and flakes easily with a fork. Cooking time will vary depending on the thickness of the fillets.

Make the Tartar Sauce

  1. 1In a small bowl, whisk together mayonnaise, chopped fresh dill, lemon juice, capers (if using), and Dijon mustard.
  2. 2Season with salt and black pepper to taste.
  3. 3Cover and refrigerate until ready to serve.

Serve

  1. 1Serve the oven-baked fish and chips immediately with the lemon-dill tartar sauce on the side.
