Ingredients

  • 4 pcs crusty bread(slices, such as baguette or ciabatta)
  • 9oz salmon fillet
  • 5oz whipped ricotta
  • 2 pcs hard-boiled eggs(quartered)
  • 1/4 cup black olives(pitted, such as Niçoise or Kalamata)
  • 1/2 cup cherry tomatoes(halved)
  • 2 tbsp fresh dill(chopped)
  • 1 tsp lemon zest
  • 1 tbsp olive oil
  • tsp salt(to taste; null)
  • tsp black pepper(to taste; null)

Instructions

Preparation

  1. Preheat oven to 200°C (390°F). Season the salmon fillet with salt and pepper, then drizzle with half of the olive oil. Bake for 12-15 minutes, or until cooked through and easily flaked. Let cool slightly.
  2. While the salmon bakes, toast the slices of crusty bread until golden brown and slightly crispy. Set aside.

Assembly

  1. Spread an even layer of whipped ricotta generously over each slice of toasted bread.
  2. Gently flake the cooked salmon and distribute evenly over the whipped ricotta on each tartine.
  3. Arrange the quartered hard-boiled eggs, pitted black olives, and halved cherry tomatoes over the salmon.
  4. Sprinkle fresh dill and lemon zest over the assembled tartines. Drizzle with the remaining olive oil, if desired, and serve immediately.
