Instructions

Prepare the Lamb

  1. 1Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Brown the lamb cubes in batches until seared on all sides. Remove lamb and set aside.
  2. 2Reduce heat to medium, add chopped onion to the pot, and cook until softened, about 5-7 minutes. Add minced garlic and cook for another minute until fragrant.
  3. 3Stir in ground cumin, coriander, ginger, cinnamon, turmeric, and paprika. Cook for 1 minute, stirring constantly, until aromatic.
  4. 4Return the lamb to the pot. Pour in chicken broth and canned diced tomatoes. Bring to a simmer, then reduce heat to low, cover, and cook for 2-2.5 hours, or until the lamb is very tender and easily shredded with a fork.
  5. 5Stir in the halved dried apricots during the last 30 minutes of cooking. Season with salt and black pepper to taste. Once cooked, shred the lamb finely within the pot.

Prepare the Cucumber Mint Yogurt Sauce

  1. 1While the lamb is cooking, combine plain yogurt, grated cucumber, chopped fresh mint, lemon juice, and minced garlic (if using) in a small bowl. Stir well to combine.
  2. 2Season the sauce with salt and black pepper to taste. Cover and refrigerate until ready to serve.

Assemble the Wraps
