Instructions

Cook the Nasi Kuning

  1. 1In a pot, combine rinsed rice, coconut milk, water, turmeric powder, bruised lemongrass, torn kaffir lime leaves, and salt.
  2. 2Stir well to ensure the turmeric is evenly distributed. Bring to a boil over medium-high heat.
  3. 3Once boiling, reduce heat to low, cover the pot, and simmer for about 20-25 minutes, or until the liquid is absorbed and the rice is cooked.
  4. 4Let the rice steam, covered, for another 10 minutes. Remove lemongrass and lime leaves before molding.

Prepare the Fried Chicken

  1. 1In a bowl, mix chicken pieces with minced garlic, coriander powder, turmeric powder, and salt. Marinate for at least 30 minutes.
  2. 2Heat sufficient oil in a wok or deep pan over medium-high heat. Carefully add the marinated chicken pieces.
  3. 3Fry the chicken until golden brown and cooked through, about 15-20 minutes, turning occasionally. Drain on paper towels.

Fry the Tempeh

  1. 1Dip the tempeh pieces into the salted water briefly. This helps to make them tender and flavorful.
  2. 2Heat oil in a separate pan over medium heat. Fry the tempeh until golden brown and crispy on both sides. Drain on paper towels.

Assemble the Mini Tumpeng

  1. 1Grease small cone-shaped molds (or use plastic cones lined with plastic wrap) with a little oil. This will prevent sticking.
  2. 2Pack the cooked nasi kuning firmly into the molds, pressing down to create a compact cone shape. Turn the molds upside down onto serving plates.
  3. 3Arrange the fried chicken, fried tempeh, and hard-boiled eggs around the base of each mini tumpeng. Add sliced cucumber for garnish.
  4. 4Serve immediately, with optional sambal on the side for those who desire extra heat.
