Ingredients

  • 1 pc puff pastry(sheet, thawed)
  • 2 pcs heirloom tomatoes(medium, various colors, thinly sliced)
  • 8oz mini mozzarella balls(bocconcini or ciliegine, drained)
  • 1/2 cup fresh basil(leaves, chiffonade)
  • 2 tbsp pesto(store-bought or homemade)
  • 1 tbsp olive oil(extra virgin)
  • tsp salt(to taste; null)
  • tsp black pepper(freshly ground, to taste; null)

Instructions

Preparation

  1. Preheat oven to 400°F (200°C).
  2. Unroll the thawed puff pastry sheet and, using a round cookie cutter or glass rim (approximately 2.5-3 inches in diameter), cut out 12-16 circles.
  3. Lightly puncture the center of each pastry circle several times with a fork, leaving a small border around the edge untouched to allow it to puff up.

Cooking

  1. Place the puff pastry circles on a baking sheet lined with parchment paper.
  2. Bake for 12-15 minutes, or until the pastry is golden brown and puffed. Remove from oven and let cool slightly on a wire rack.

Assembly

  1. While the pastry cools, combine the pesto with olive oil in a small bowl to create a pesto oil. Set aside.
  2. Once the pastry tartlets are slightly cooled, gently press down the center of each if it has puffed up too much, creating a small well.
  3. Arrange a few slices of heirloom tomato, a mini mozzarella ball (or halves), and a sprinkle of basil chiffonade on top of each tartlet.
  4. Drizzle generously with the prepared pesto oil. Season lightly with salt and freshly ground black pepper.
  5. Serve immediately or at room temperature.
