Instructions
Prepare Panna Cotta
- 1Bloom the gelatin by sprinkling it over the 1 2/3 fl oz of cold water in a small bowl. Let it sit for 5-10 minutes until it thickens.
- 2In a saucepan, combine coconut milk, heavy cream, and 3oz sugar. Heat gently over medium heat, stirring until the sugar is dissolved. Do not boil.
- 3Remove the saucepan from heat. Squeeze out excess water from the bloomed gelatin and whisk it into the warm cream mixture until fully dissolved.
- 4Stir in the lime zest. Pour the mixture into 6 individual ramekins or glasses.
- 5Chill in the refrigerator for at least 4 hours, or until set.
Prepare Mango Layer
- 1If using fresh mango, peel and puree the flesh. If using frozen, thaw and then puree.
- 2Stir in 1oz sugar if desired, tasting and adjusting sweetness as needed.
Assemble and Serve
- 1Once the panna cotta is set, gently spoon a layer of mango puree over the top of each serving.
