Instructions

Prepare Panna Cotta

  1. 1Bloom the gelatin by sprinkling it over the 1 2/3 fl oz of cold water in a small bowl. Let it sit for 5-10 minutes until it thickens.
  2. 2In a saucepan, combine coconut milk, heavy cream, and 3oz sugar. Heat gently over medium heat, stirring until the sugar is dissolved. Do not boil.
  3. 3Remove the saucepan from heat. Squeeze out excess water from the bloomed gelatin and whisk it into the warm cream mixture until fully dissolved.
  4. 4Stir in the lime zest. Pour the mixture into 6 individual ramekins or glasses.
  5. 5Chill in the refrigerator for at least 4 hours, or until set.

Prepare Mango Layer

  1. 1If using fresh mango, peel and puree the flesh. If using frozen, thaw and then puree.
  2. 2Stir in 1oz sugar if desired, tasting and adjusting sweetness as needed.

Assemble and Serve

  1. 1Once the panna cotta is set, gently spoon a layer of mango puree over the top of each serving.
  2. 2Serve immediately or return to the refrigerator for a short chill before serving.
