Instructions

Prepare the Mascarpone Cream

  1. 1In a clean bowl, whisk egg whites until stiff peaks form.
  2. 2In a separate bowl, beat the egg yolks with half of the sugar until pale and creamy.
  3. 3Gently fold the mascarpone cheese into the egg yolk mixture until smooth.
  4. 4Carefully fold the whisked egg whites into the mascarpone mixture until just combined, being careful not to deflate the cream.

Assemble the Tiramisu

  1. 1Quickly dip each ladyfinger into the cooled espresso, ensuring they absorb the liquid but do not become soggy.
  2. 2Arrange a single layer of dipped ladyfingers in the bottom of a serving dish.
  3. 3Spread half of the mascarpone cream evenly over the ladyfinger layer.
  4. 4Create a second layer of dipped ladyfingers.
  5. 5Spread the remaining mascarpone cream over the second ladyfinger layer.
  6. 6Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld.

Serve

  1. 1Just before serving, dust the top generously with unsweetened cocoa powder.
