Instructions

Prepare the Crust

  1. 1In a bowl, combine softened butter and sugar. Mix until creamy.
  2. 2Add the flour and egg yolk. Mix until a dough forms. Do not overmix.
  3. 3Press the dough evenly into the bottom of a 23cm (9-inch) springform pan.
  4. 4Bake at 180°C (350°F) for 10-12 minutes until lightly golden. Remove from oven and let cool.

Prepare the Filling

  1. 1In a large bowl, whisk together the farmer's cheese, sugar, 4 egg yolks, vanilla extract, cornstarch, and sour cream until smooth and well combined.
  2. 2In a separate clean bowl, whisk the 4 egg whites until stiff peaks form.
  3. 3Gently fold the whisked egg whites into the cheese mixture in two additions, being careful not to deflate the batter.

Prepare the Chocolate Swirl

  1. 1Melt the dark chocolate, butter, and cocoa powder together in a double boiler or microwave until smooth.
  2. 2Let the chocolate mixture cool slightly.

Assemble and Bake

  1. 1Pour half of the cheese filling over the cooled crust.
  2. 2Drizzle half of the chocolate mixture over the cheese filling and gently swirl with a toothpick or skewer.
  3. 3Pour the remaining cheese filling over the swirled layer.
  4. 4Drizzle the rest of the chocolate mixture on top and create more swirls.
  5. 5Bake in a preheated oven at 160°C (320°F) for 50-55 minutes, or until the Sernik is set but still slightly jiggly in the center.
  6. 6Turn off the oven, crack the door open slightly, and let the Sernik cool in the oven for about 1 hour to prevent cracking.
  7. 7Remove from the oven, let it cool completely on a wire rack, then chill in the refrigerator for at least 4 hours, preferably overnight.
