Ingredients

Chicken Marinade

  • 21oz boneless, skinless chicken thighs(cut into bite-sized pieces)
  • 4 tbsp yogurt(plain, full-fat)
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 3 pcs garlic(minced)
  • 2 tsp cumin
  • 1 tsp coriander
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 1/4 tsp cinnamon
  • 1 tsp salt
  • 1/2 tsp black pepper

For Serving

  • 4 pcs pita bread(warmed)
  • lettuce(shredded)
  • 1 pc tomato(sliced)
  • 1/2 pcs cucumber(sliced)
  • 1/4 pcs red onion(thinly sliced)
  • tahini sauce(optional)
  • garlic sauce(optional)

Instructions

Marinate the Chicken

  1. In a bowl, combine yogurt, lemon juice, olive oil, minced garlic, cumin, coriander, paprika, turmeric, cinnamon, salt, and black pepper.
  2. Add the bite-sized chicken pieces to the marinade and toss to coat evenly.
  3. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours, to allow the flavors to meld.

Cook the Chicken

  1. Preheat your oven to 200°C (400°F).
  2. Spread the marinated chicken in a single layer on a baking sheet lined with parchment paper.
  3. Bake for 20-25 minutes, or until the chicken is cooked through and slightly caramelized, flipping halfway through.

Assemble the Kebabs

  1. Warm the pita bread slightly.
  2. Place some of the cooked chicken inside each pita bread.
  3. Add shredded lettuce, sliced tomato, cucumber, and red onion.
  4. Drizzle with tahini sauce or garlic sauce, if desired.
  5. Fold or roll the pita bread to serve.
