Chicken Marinade
- 21oz boneless, skinless chicken thighs(cut into bite-sized pieces)
- 4 tbsp yogurt(plain, full-fat)
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 3 pcs garlic(minced)
- 2 tsp cumin
- 1 tsp coriander
- 1 tsp paprika
- 1/2 tsp turmeric
- 1/4 tsp cinnamon
- 1 tsp salt
- 1/2 tsp black pepper
For Serving
- 4 pcs pita bread(warmed)
- lettuce(shredded)
- 1 pc tomato(sliced)
- 1/2 pcs cucumber(sliced)
- 1/4 pcs red onion(thinly sliced)
- tahini sauce(optional)
- garlic sauce(optional)
Instructions
Marinate the Chicken
- In a bowl, combine yogurt, lemon juice, olive oil, minced garlic, cumin, coriander, paprika, turmeric, cinnamon, salt, and black pepper.
- Add the bite-sized chicken pieces to the marinade and toss to coat evenly.
- Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours, to allow the flavors to meld.
Cook the Chicken
- Preheat your oven to 200°C (400°F).
- Spread the marinated chicken in a single layer on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes, or until the chicken is cooked through and slightly caramelized, flipping halfway through.
Assemble the Kebabs
- Warm the pita bread slightly.
- Place some of the cooked chicken inside each pita bread.
- Add shredded lettuce, sliced tomato, cucumber, and red onion.
- Drizzle with tahini sauce or garlic sauce, if desired.
- Fold or roll the pita bread to serve.
