Prepare

  1. 1Slice bacon into thin strips and pat dry with paper towel; set aside.
  2. 2In a bowl, whisk together flour, warm water, beaten eggs, salt, and sugar until a smooth, thin batter forms. Stir in sliced scallions.
  3. 3Place processed cheese slices and any sauces within reach for quick assembly during cooking.

Cook

  1. 1Heat a nonstick skillet over medium heat and add 1 teaspoon oil; spread to coat.
  2. 2Pour about 1/3 cup (80–3 3/8 fl oz) batter into the pan and quickly tilt to spread into a thin, round crepe about 6–8 inches wide.
  3. 3Cook batter until edges lift and underside is lightly golden, about 1–2 minutes.
  4. 4Lay bacon strips across the crepe, then top with cheese slices and a little extra scallion. Fold or flip one side of the crepe over to cover filling.
  5. 5Press gently and cook another 1–2 minutes until bacon is crisp and cheese melts; add a little more oil if pan is dry.

Assemble & serve

  1. 1Remove crepe from pan, roll tightly from one edge into a compact roll, seam side down to hold shape.
  2. 2Brush lightly with sweet soy or chili sauce for contrast, slice in half on the diagonal to reveal gooey cheese.
  3. 3Serve immediately while warm as a grab-and-go breakfast or snack. Repeat with remaining batter and filling.
