Instructions

Dough

  1. 1In a large bowl, whisk together flour, granulated sugar, yeast, ground cardamom, and salt.
  2. 2In a separate bowl, combine lukewarm milk, melted butter, and beaten egg. Pour the wet ingredients into the dry ingredients.
  3. 3Mix until a shaggy dough forms. Turn out onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic.
  4. 4Place the dough in a lightly oiled bowl, cover, and let rise in a warm place for 1-1.5 hours, or until doubled in size.

Assembly and Baking

  1. 1Punch down the risen dough and turn it out onto a lightly floured surface. Roll into a large rectangle, approximately 12x18 inches.
  2. 2In a small bowl, mix softened butter, brown sugar, cinnamon, and ground cardamom for the filling. Spread this mixture evenly over the dough, leaving a small border on one long edge.
  3. 3Sprinkle the chopped toasted pecans over the filling.
  4. 4Tightly roll up the dough starting from the long edge *opposite* the border. Pinch the seam to seal.
  5. 5Cut the log into 12 equal slices. Place the slices cut-side up in a greased 9x13 inch baking pan.
  6. 6Cover the pan and let the buns rise for another 30-45 minutes while the oven preheats to 375°F (190°C).
  7. 7Bake for 18-20 minutes, or until golden brown.

Glazing and Serving

  1. 1While the buns are baking, whisk together powdered sugar, milk, and vanilla extract to make the glaze. Adjust consistency with more milk or sugar if needed.
  2. 2Remove buns from the oven and immediately drizzle the glaze over the warm buns.
  3. 3Let cool slightly before serving.

Tips

  • Ensure your milk is lukewarm, not hot, to activate the yeast properly for a good rise.
  • To prevent the bottoms from burning, you can place a baking sheet on the rack below the buns.
  • Serve warm with a glass of milk or a cup of coffee for the ultimate Swedish treat.
