Instructions

Prepare Mascarpone Cream

  1. 1In a medium bowl, whisk together egg yolks and sugar until pale and slightly thickened.
  2. 2Add the softened mascarpone cheese and vanilla extract to the yolk mixture. Beat on low speed until just combined and smooth. Be careful not to overmix.

Prepare Berry Mixture

  1. 1In a shallow dish, combine the cooled espresso and limoncello.
  2. 2Gently fold the mixed berries into the mascarpone cream.

Assemble Tiramisu Cups

  1. 1Quickly dip each ladyfinger into the espresso-limoncello mixture, ensuring they don't become too soggy.
  2. 2Arrange a layer of dipped ladyfingers at the bottom of 8 individual serving glasses or cups.
  3. 3Spoon a layer of the berry mascarpone cream over the ladyfingers.
  4. 4Repeat with another layer of ladyfingers and then the remaining cream.
  5. 5Cover the cups and refrigerate for at least 2 hours, or until set.
  6. 6Just before serving, dust the top of each tiramisu cup with cocoa powder.
