- 4oz sugar(granulated)
- 18oz mascarpone cheese(full-fat, at room temperature)

- 24 pcs ladyfingers (savoiardi)
- 10 1/7 fl oz espresso coffee(strong brewed, cooled)
- 1oz cocoa powder(unsweetened, for dusting)
Instructions
Prepare the Mascarpone Cream
- In a clean bowl, whisk egg whites until stiff peaks form.
- In a separate bowl, beat the egg yolks with half of the sugar until pale and creamy.
- Gently fold the mascarpone cheese into the egg yolk mixture until smooth.
- Carefully fold the whisked egg whites into the mascarpone mixture until just combined, being careful not to deflate the cream.
Assemble the Tiramisu
- Quickly dip each ladyfinger into the cooled espresso, ensuring they absorb the liquid but do not become soggy.
- Arrange a single layer of dipped ladyfingers in the bottom of a serving dish.
- Spread half of the mascarpone cream evenly over the ladyfinger layer.
- Create a second layer of dipped ladyfingers.
- Spread the remaining mascarpone cream over the second ladyfinger layer.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld.
Serve
- Just before serving, dust the top generously with unsweetened cocoa powder.
