Ingredients

Mascarpone Cream

  • 4 pcs eggs(separated, at room temperature)
  • 4oz sugar(granulated)
  • 18oz mascarpone cheese(full-fat, at room temperature)

Assembly

  • 24 pcs ladyfingers (savoiardi)
  • 10 1/7 fl oz espresso coffee(strong brewed, cooled)
  • 1oz cocoa powder(unsweetened, for dusting)

Instructions

Prepare the Mascarpone Cream

  1. In a clean bowl, whisk egg whites until stiff peaks form.
  2. In a separate bowl, beat the egg yolks with half of the sugar until pale and creamy.
  3. Gently fold the mascarpone cheese into the egg yolk mixture until smooth.
  4. Carefully fold the whisked egg whites into the mascarpone mixture until just combined, being careful not to deflate the cream.

Assemble the Tiramisu

  1. Quickly dip each ladyfinger into the cooled espresso, ensuring they absorb the liquid but do not become soggy.
  2. Arrange a single layer of dipped ladyfingers in the bottom of a serving dish.
  3. Spread half of the mascarpone cream evenly over the ladyfinger layer.
  4. Create a second layer of dipped ladyfingers.
  5. Spread the remaining mascarpone cream over the second ladyfinger layer.
  6. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld.

Serve

  1. Just before serving, dust the top generously with unsweetened cocoa powder.
