Preparation
- Preheat your oven to 350°F (175°C). Lightly grease four individual ramekins or oven-safe pudding cups.
- Arrange the torn almond croissant pieces evenly in the prepared ramekins. Do not overcrowd.
Making the Custard
- In a medium bowl, whisk together the milk, heavy cream, eggs, granulated sugar, almond extract, and vanilla extract until well combined and smooth.
- Carefully pour the custard mixture over the croissant pieces in each ramekin, ensuring the croissants are soaked.
Baking
- Place the ramekins into a larger baking dish. Fill the larger baking dish with hot water, reaching about halfway up the sides of the ramekins. This creates a water bath (bain-marie) which helps the pudding cook evenly and prevents it from cracking.
- Bake for 25-30 minutes, or until the custard is set and lightly golden on top. A knife inserted into the center should come out clean.
- Carefully remove the ramekins from the water bath and let them cool slightly on a wire rack.
