Instructions

Roast Potatoes

  1. 1Preheat oven to 200°C (400°F).
  2. 2Toss potato cubes with 2 tbsp of olive oil, salt, and pepper on a baking sheet.
  3. 3Roast for 20-25 minutes, or until tender and golden brown, flipping halfway through.

Prepare Alheira and Eggs

  1. 1While potatoes are roasting, prick the alheiras with a fork to prevent bursting.
  2. 2Heat 1 tbsp of olive oil in a non-stick skillet over medium heat.
  3. 3Add the alheiras and pan-sear for about 10-12 minutes, turning occasionally, until browned and heated through.
  4. 4In a separate pan, fry the eggs to your preference using the remaining 1 tbsp of olive oil.

Assemble

  1. 1Divide the roasted potatoes between two plates.
  2. 2Place one pan-seared alheira on top of the potatoes on each plate.
  3. 3Top each alheira with a fried egg.
  4. 4Season with salt and pepper if desired.

Tips

  • To ensure the alheira cooks evenly and doesn't burst, prick it a few times with a fork before pan-searing.
