Ingredients

Main

  • 2kg shrimp(head on)
  • 3 tbsp cajun seasoning
  • 3 tbsp paprika
  • 2 tbsp oregano
  • 2 tbsp cayenne pepper
  • 2 tbsp chili powder
  • 2 tbsp lemon pepper
  • 3 tbsp louisiana hot sauce
  • 3 tbsp sugar
  • 4 pcs garlic(heads, minced)
  • 4 unsalted butter(sticks)
  • 4 tbsp old bay seasoning
  • 1/2 cup garlic powder
  • 1 cup lime or lemon juice(1-2 cups; adjust to taste)
  • 4 pcs corn on the cob(halved)

Instructions

Main

  1. Add all ingredients except shrimp and corn to a pot.
  2. Simmer until spices and butter are well combined, tasting and adjusting seasonings to your liking.
  3. Add the shrimp and stir constantly to ensure even cooking; avoid overcooking.
  4. When shrimp turns pinkish, add the corn and cook for 2 minutes.
  5. Turn off the heat and cover the pot; let rest for 5 minutes to finish cooking and absorb flavors.
  6. Serve shrimp and corn hot.
  7. Optional: serve with a sauce of lime juice, pepper and salt or a mix of ketchup, mayo and lemon pepper.

Tips

  • Thaw shrimp and pat dry; trim shells if desired to allow seasoning to penetrate.
  • Taste and adjust spice levels while simmering; start with less cayenne if sensitive.
  • Serve hot with melted garlic butter and extra lemon or lime wedges for squeezing.
