  • 1 tbsp adobo seasoning
  • 1/8 tsp black pepper
  • oregano(optional)
  • 1 goya sazon with coriander and annatto(packet)
  • 2 tbsp sofrito (liquid seasoning)(liquid seasoning; recipe on author's channel)
  • 1 tbsp oil(for browning the meat)
  • 1/2 tsp sugar(for color)
  • 1 pc lemon(or vinegar to wash the meat)

Instructions

  1. Adjust ingredient amounts based on the quantity of chicken you are using.
  2. Wash the chicken with lemon or, if unavailable, use vinegar to clean it.
  3. Add all seasonings to the chicken and mix well so the flavors incorporate.
  4. Heat oil in a pot or pan, then add the sugar and let it caramelize slightly to give color and flavor.
  5. Add the chicken to brown; leave for about a minute then turn to brown the other side, cover and add a little water to prevent burning.
  6. Simmer the covered chicken for about 40 minutes, watching closely and adding small amounts of water while stirring to keep it from drying out.

Tips

  • Trim excess fat and pat chicken dry before seasoning to help browning and flavor.
  • Caramelize the sugar until light amber, watching closely to avoid burning or bitterness.
  • Let the stew simmer gently, adding small amounts of water and stirring occasionally.
