Ingredients

  • 680g chicken thighs(bone-in, skin-on)
  • 4 pcs garlic(cloves, minced)
  • 1 pc lemon(zest and juice)
  • 2 tbsp olive oil
  • salt(to taste)
  • black pepper(to taste)

Herb Finish

  • 2 tbsp parsley(chopped)
  • 1 tbsp butter(optional)

Instructions

  1. Preheat oven to 200 °C. Pat chicken dry and season with salt and pepper.
  2. Whisk garlic, lemon zest, lemon juice, and olive oil in a bowl.
  3. Toss chicken with the mixture; arrange skin-side up on a sheet pan.
  4. Roast 25–30 min until cooked through and skin is golden.

Herb Finish

  1. Rest 5 min. Sprinkle parsley and dot with butter if desired. Serve warm.

Tips

  • Dry the chicken well to promote crisp, golden skin during roasting.
  • Roast on the top rack for more browning; rotate the pan once halfway through.
