Ingredients

  • 4 pcs artisan bread(thick slices)
  • 1 cup ricotta cheese(whole milk for creaminess)
  • 2 pcs ripe tomatoes(sliced)
  • 1/2 cup fresh basil(leaves)
  • 2 tbsp pesto(store-bought or homemade)
  • 2 tbsp olive oil(for drizzling)
  • salt(to taste)
  • black pepper(to taste)

Instructions

Toast the Bread

  1. Preheat oven broiler or grill.
  2. Lightly brush or drizzle the artisan bread slices with olive oil.
  3. Toast the bread slices on both sides until golden brown and slightly crispy. This can be done under the broiler, on a grill, or in a toaster oven.

Prepare the Whipped Ricotta

  1. In a small bowl, combine the ricotta cheese with 1 tablespoon of olive oil, a pinch of salt, and pepper.
  2. Whip the ricotta with a fork or a whisk until it's smooth and creamy. If it's too thick, add a little more olive oil or a splash of milk.

Assemble the Toast

  1. Spread a generous layer of whipped ricotta onto each slice of toasted artisan bread.
  2. Arrange the tomato slices over the whipped ricotta.
  3. Top with fresh basil leaves.
  4. Drizzle with pesto and the remaining olive oil.
  5. Season with additional salt and pepper to taste.
