Ingredients

Wontons

  • 30 pcs vegetarian wonton wrappers(or use pre-made vegetarian wontons)
  • 7oz firm tofu(crumbled)
  • 4oz shiitake mushrooms(finely chopped)
  • 2 pcs green onions(finely chopped)
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp ginger(grated)
  • 1 tsp cornstarch

Soup

  • 8 cup vegetable broth
  • 2 pcs bok choy(quartered)
  • 2 pcs garlic(minced)
  • salt(to taste)
  • white pepper(to taste)

Instructions

Prepare the Wonton Filling

  1. In a medium bowl, combine the crumbled tofu, chopped shiitake mushrooms, chopped green onions, soy sauce, sesame oil, grated ginger, and cornstarch. Mix well until evenly combined.
  2. To assemble the wontons, place about a teaspoon of filling in the center of each wrapper. Moisten the edges of the wrapper with water, then fold and seal to form wontons. Ensure they are well-sealed to prevent leakage.

Cook the Soup

  1. In a large pot, bring the vegetable broth to a boil. Add the minced garlic and cook for 1 minute until fragrant.
  2. Carefully add the prepared wontons to the boiling broth. Cook for about 5-7 minutes, or until the wontons float to the surface and are cooked through.
  3. Add the quartered bok choy to the pot and cook for another 2-3 minutes until tender but still slightly crisp.
  4. Season the soup with salt and white pepper to taste.
