Ingredients
Wontons
- 30 pcs vegetarian wonton wrappers(or use pre-made vegetarian wontons)
- 7oz firm tofu(crumbled)
- 4oz shiitake mushrooms(finely chopped)
- 2 pcs green onions(finely chopped)
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 tsp ginger(grated)
- 1 tsp cornstarch
Soup
- 8 cup vegetable broth
- 2 pcs bok choy(quartered)
- 2 pcs garlic(minced)
- salt(to taste)
- white pepper(to taste)
Instructions
Prepare the Wonton Filling
- In a medium bowl, combine the crumbled tofu, chopped shiitake mushrooms, chopped green onions, soy sauce, sesame oil, grated ginger, and cornstarch. Mix well until evenly combined.
- To assemble the wontons, place about a teaspoon of filling in the center of each wrapper. Moisten the edges of the wrapper with water, then fold and seal to form wontons. Ensure they are well-sealed to prevent leakage.
Cook the Soup
- In a large pot, bring the vegetable broth to a boil. Add the minced garlic and cook for 1 minute until fragrant.
- Carefully add the prepared wontons to the boiling broth. Cook for about 5-7 minutes, or until the wontons float to the surface and are cooked through.
- Add the quartered bok choy to the pot and cook for another 2-3 minutes until tender but still slightly crisp.
- Season the soup with salt and white pepper to taste.

Tips
- For a more robust flavor, you can add finely diced water chestnuts to the wonton filling for a pleasant crunch.
- Ensure wonton wrappers are thinly coated with water to seal properly, but avoid making them too soggy, which can cause them to tear.
- Garnish with fresh cilantro or thinly sliced scallions for an extra burst of flavor and color before serving hot.
