Ingredients

  • 2 cup green lentils(cooked and drained)
  • 9oz mushrooms(finely chopped)
  • 1 pc onion(finely chopped)
  • 1 cup breadcrumbs(plain)
  • 1 pc eggplant(medium, peeled and finely diced)
  • 3 tbsp nutritional yeast
  • 2 pcs eggs(beaten)
  • 1/2 cup vegetable broth
  • 2 tsp garlic(minced)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp marjoram(dried)

Instructions

Bake Preparation

  1. Preheat your oven to 180°C (350°F). Lightly grease a loaf pan or line it with parchment paper.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.
  3. Add the finely chopped mushrooms and diced eggplant to the skillet. Cook, stirring occasionally, until the vegetables are tender and most of the moisture has evaporated, about 10-15 minutes.
  4. Stir in the minced garlic, dried marjoram, salt, and black pepper. Cook for another minute until fragrant.
  5. In a large mixing bowl, combine the cooked lentils, the vegetable mixture from the skillet, breadcrumbs, and nutritional yeast.
  6. Add the beaten eggs and vegetable broth to the bowl. Mix everything thoroughly until well combined. The mixture should hold together when pressed.
  7. Transfer the mixture to the prepared loaf pan, pressing it down firmly and evenly to create a compact loaf.
  8. Cover the loaf pan with foil and bake for 30 minutes. Remove the foil and bake for another 20 minutes, or until the top is golden brown and firm to the touch.
  9. Let the Leberkäse rest in the pan for at least 10-15 minutes before slicing and serving. This helps it hold its shape.
