Ingredients

  • 8oz halloumi cheese(sliced into 1cm thick pieces)
  • 4 pcs pita bread(warmed)
  • 1 cup roasted red peppers(sliced)
  • 2 cup mixed salad greens

Dill Sauce

  • 1/2 cup plain yogurt(full-fat recommended)
  • 2 tbsp fresh dill(chopped)
  • 1 tbsp lemon juice
  • 1 tsp garlic(minced)
  • salt(to taste)
  • black pepper(to taste)

Instructions

Prepare the Dill Sauce

  1. In a small bowl, whisk together the yogurt, chopped dill, lemon juice, and minced garlic.
  2. Season with salt and black pepper to taste. Set aside.

Cook the Halloumi

  1. Heat a non-stick skillet over medium-high heat. Add the sliced halloumi cheese.
  2. Pan-fry for 2-3 minutes per side, until golden brown and slightly crispy.

Assemble the Wraps

  1. Spread a generous amount of dill sauce onto each warm pita bread.
  2. Layer with mixed salad greens, roasted red peppers, and the pan-fried halloumi slices.
  3. Fold or roll the pita bread to form wraps.
