Ingredients

Grechanyky

  • 1 cup buckwheat groats(cooked)
  • 7oz mushrooms(finely chopped)
  • 1 pc onion(finely chopped)
  • 1/4 cup fresh dill(chopped)
  • 1 pc egg(beaten)
  • 2 tbsp flour(plus more for coating)
  • tsp salt(to taste)
  • tsp black pepper(to taste)
  • tbsp vegetable oil(for frying)

Instructions

Preparation

  1. In a large bowl, combine the cooked buckwheat groats, finely chopped mushrooms, finely chopped onion, chopped fresh dill, beaten egg, 2 tbsp flour, salt, and pepper.
  2. Mix well until all ingredients are thoroughly combined, forming a thick mixture. If the mixture is too wet, add a little more flour.
  3. Form the mixture into small patties, about 2-3 inches in diameter. Lightly coat each patty in flour.

Cooking

  1. Heat vegetable oil in a large skillet over medium heat.
  2. Carefully place the grechanyky patties into the hot skillet, ensuring not to overcrowd the pan.
  3. Fry for 4-5 minutes per side, or until golden brown and crispy. Adjust heat as needed to prevent burning.
  4. Remove the cooked grechanyky from the skillet and place them on a plate lined with paper towels to drain excess oil.

Tips

  • Cook the buckwheat groats in advance to save time during preparation. Ensure they are cooled before mixing.
  • For an extra crispy exterior, ensure the oil is hot but not smoking before adding the grechanyky to the pan.
  • Serve grechanyky hot, accompanied by a dollop of sour cream or a fresh herb yogurt sauce. They are also delicious with a side of pickled vegetables.
