Noodles and Vegetables

  1. 1Cook e-fu noodles according to package directions until al dente. Drain and set aside. Blanch bok choy in boiling water for 1-2 minutes until tender-crisp. Drain and set aside.
  2. 2In a large skillet or wok, heat vegetable oil over medium-high heat. Add minced garlic and ginger and stir-fry until fragrant, about 30 seconds.
  3. 3Add the trimmed enoki mushrooms and stir-fry for another minute until slightly softened.

Sauce and Assembly

  1. 1In a small bowl, whisk together vegetarian oyster sauce, light soy sauce, sesame oil, sugar, and water.
  2. 2Pour the sauce mixture into the skillet with the mushrooms. Bring to a simmer.
  3. 3Stir in the dissolved cornstarch mixture to thicken the sauce. Cook for 1 minute until glossy.
  4. 4Add the cooked e-fu noodles and blanched bok choy to the skillet. Toss gently to coat everything evenly with the sauce.
  5. 5Cook for another 1-2 minutes until the noodles and vegetables are heated through and well-coated.
