- 9oz e-fu noodles(dried)
- 2 pcs bok choy(halved lengthwise)
- 1 cup enoki mushrooms(trimmed)
- 2 tbsp vegetable oil
- 3 pcs garlic(minced)
- 1 tsp ginger(minced)
Sauce
- 3 tbsp vegetarian oyster sauce
- 2 tbsp light soy sauce
- 1 tsp sesame oil
- 1 tsp sugar
- 1/2 cup water
- 1 tsp cornstarch(dissolved in 1 tbsp water)
Instructions
Noodles and Vegetables
- Cook e-fu noodles according to package directions until al dente. Drain and set aside. Blanch bok choy in boiling water for 1-2 minutes until tender-crisp. Drain and set aside.
- In a large skillet or wok, heat vegetable oil over medium-high heat. Add minced garlic and ginger and stir-fry until fragrant, about 30 seconds.
- Add the trimmed enoki mushrooms and stir-fry for another minute until slightly softened.
Sauce and Assembly
- In a small bowl, whisk together vegetarian oyster sauce, light soy sauce, sesame oil, sugar, and water.
- Pour the sauce mixture into the skillet with the mushrooms. Bring to a simmer.
- Stir in the dissolved cornstarch mixture to thicken the sauce. Cook for 1 minute until glossy.
- Add the cooked e-fu noodles and blanched bok choy to the skillet. Toss gently to coat everything evenly with the sauce.
- Cook for another 1-2 minutes until the noodles and vegetables are heated through and well-coated.
