Ingredients

Tartlet Shells

  • 1lb puff pastry(thawed according to package directions)
  • 1 pc egg(beaten, for egg wash)

Shrimp Filling

  • 1lb shrimp(cooked, peeled, and deveined, roughly chopped)
  • 1/2 cup crème fraîche
  • 2 tbsp mayonnaise(optional, for extra creaminess)
  • 2 tbsp dill(fresh, finely chopped)
  • 1 tbsp lemon(juice of)
  • salt(to taste)
  • black pepper(freshly ground, to taste)

Garnish

  • 12 pcs dill sprigs(fresh, for garnish)
  • 12 pcs lemon wedges(for serving)

Instructions

Prepare Tartlet Shells

  1. Preheat oven to 400°F (200°C). Lightly grease mini muffin tins or tartlet molds.
  2. Unfold the puff pastry sheet and cut out circles slightly larger than the tartlet molds. Gently press the pastry circles into the molds.
  3. Prick the bottom of each pastry shell with a fork a few times.
  4. Brush the edges of the pastry shells with the beaten egg wash.
  5. Bake for 12-15 minutes, or until golden brown and puffed.
  6. Remove from oven and let cool slightly in the tins before removing them to a wire rack to cool completely.

Make Shrimp Filling

  1. In a medium bowl, combine the cooked, chopped shrimp, crème fraîche, mayonnaise (if using), chopped dill, and lemon juice.
  2. Season with salt and freshly ground black pepper to taste. Stir gently to combine.

Assemble Tartlets

  1. Just before serving, spoon the shrimp filling evenly into the cooled tartlet shells.
  2. Garnish each tartlet with a small sprig of fresh dill.
  3. Arrange the Toast Skagen Tartlets on a platter with lemon wedges on the side.
