Ingredients
Tartlet Shells
- 1lb puff pastry(thawed according to package directions)
- 1 pc egg(beaten, for egg wash)
Shrimp Filling
- 1lb shrimp(cooked, peeled, and deveined, roughly chopped)
- 1/2 cup crème fraîche
- 2 tbsp mayonnaise(optional, for extra creaminess)
- 2 tbsp dill(fresh, finely chopped)
- 1 tbsp lemon(juice of)
- salt(to taste)
- black pepper(freshly ground, to taste)
Garnish
- 12 pcs dill sprigs(fresh, for garnish)
- 12 pcs lemon wedges(for serving)
Instructions
Prepare Tartlet Shells
- Preheat oven to 400°F (200°C). Lightly grease mini muffin tins or tartlet molds.
- Unfold the puff pastry sheet and cut out circles slightly larger than the tartlet molds. Gently press the pastry circles into the molds.
- Prick the bottom of each pastry shell with a fork a few times.
- Brush the edges of the pastry shells with the beaten egg wash.
- Bake for 12-15 minutes, or until golden brown and puffed.
- Remove from oven and let cool slightly in the tins before removing them to a wire rack to cool completely.
Make Shrimp Filling
- In a medium bowl, combine the cooked, chopped shrimp, crème fraîche, mayonnaise (if using), chopped dill, and lemon juice.
- Season with salt and freshly ground black pepper to taste. Stir gently to combine.
Assemble Tartlets
- Just before serving, spoon the shrimp filling evenly into the cooled tartlet shells.
- Garnish each tartlet with a small sprig of fresh dill.
- Arrange the Toast Skagen Tartlets on a platter with lemon wedges on the side.
