Ingredients

Pastry

  • 2 pcs pastry dough(sheets, preferably puff pastry or rough puff)

Filling

  • 4 pcs apples(medium, peeled, cored, and thinly sliced (e.g., Honeycrisp or Granny Smith))
  • 1/2 cup brown sugar(packed)
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch

Egg Wash

  • 1 pc egg(large, beaten)
  • 1 tbsp water

Instructions

Prepare the Filling

  1. In a large bowl, combine the thinly sliced apples, brown sugar, ground cinnamon, ground nutmeg, lemon juice, and cornstarch. Toss gently to ensure the apples are evenly coated. Set aside to let the flavors meld while you prepare the pastry.

Assemble the Pastizzi

  1. Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.
  2. Lightly flour a clean surface. Roll out each pastry dough sheet slightly, if needed, to about 1/8 inch thickness. Cut each sheet into 5-inch squares or circles, or a suitable size for individual pastizzi, yielding approximately 10-12 pieces if using standard puff pastry sheets.
  3. Place about 2 tablespoons of the apple filling onto the center of each pastry square or circle.
  4. To form the pastizzi, fold one corner of the pastry over the filling to meet the opposite corner, creating a triangle. Pinch the edges firmly to seal. Alternatively, fold the pastry in half to create a semi-circle and crimp the edges with a fork to seal.
  5. In a small bowl, whisk together the egg and water to create an egg wash.
  6. Carefully transfer the assembled pastizzi to the prepared baking sheet. Brush the tops of each pastizz with the egg wash.

Bake

  1. Bake for 20-22 minutes, or until the pastry is golden brown and puffed up, and the apple filling is tender and bubbling slightly. Cooking times may vary depending on your oven.
  2. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool slightly. Serve warm.
