Instructions

For the Rarebit Mixture

  1. 1In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until it forms a smooth paste.
  2. 2Gradually whisk in the milk until smooth. Bring the mixture to a simmer, stirring constantly, until it thickens.
  3. 3Remove from heat and stir in the grated cheddar cheese, Worcestershire sauce, salt, and pepper until the cheese is fully melted and the sauce is smooth. Let it cool slightly.
  4. 4Stir in the beaten egg until well combined.

For the Muffins

  1. 1Preheat your oven to 190°C (375°F). Grease a 12-cup muffin tin or line with paper liners.
  2. 2In a large bowl, whisk together the flour and baking powder.
  3. 3Gently fold the diced jalapeños into the cooled rarebit mixture.
  4. 4Spoon the rarebit and jalapeño mixture into the muffin cups, filling them about two-thirds full.
