Ingredients
- 7oz cheddar cheese(grated)
 - 2 pcs jalapeños(finely diced, seeds removed for less heat)
 - 9oz flour(all-purpose)
 - 2 tbsp worcestershire sauce
 - 6 3/4 fl oz milk
 - 1 pc egg(beaten)
 - 2oz butter(melted)
 - 2 tsp baking powder
 - 1/2 tsp salt
 - 1/4 tsp black pepper(freshly ground)
 
Instructions
For the Rarebit Mixture
- In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until it forms a smooth paste.
 - Gradually whisk in the milk until smooth. Bring the mixture to a simmer, stirring constantly, until it thickens.
 - Remove from heat and stir in the grated cheddar cheese, Worcestershire sauce, salt, and pepper until the cheese is fully melted and the sauce is smooth. Let it cool slightly.
 - Stir in the beaten egg until well combined.
 
For the Muffins
- Preheat your oven to 190°C (375°F). Grease a 12-cup muffin tin or line with paper liners.
 - In a large bowl, whisk together the flour and baking powder.
 - Gently fold the diced jalapeños into the cooled rarebit mixture.
 - Spoon the rarebit and jalapeño mixture into the muffin cups, filling them about two-thirds full.
 - Bake for 20-25 minutes, or until the muffins are golden brown and a skewer inserted into the center comes out clean.
