Ingredients

  • 7oz cheddar cheese(grated)
  • 2 pcs jalapeños(finely diced, seeds removed for less heat)
  • 9oz flour(all-purpose)
  • 2 tbsp worcestershire sauce
  • 6 3/4 fl oz milk
  • 1 pc egg(beaten)
  • 2oz butter(melted)
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper(freshly ground)

Instructions

For the Rarebit Mixture

  1. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until it forms a smooth paste.
  2. Gradually whisk in the milk until smooth. Bring the mixture to a simmer, stirring constantly, until it thickens.
  3. Remove from heat and stir in the grated cheddar cheese, Worcestershire sauce, salt, and pepper until the cheese is fully melted and the sauce is smooth. Let it cool slightly.
  4. Stir in the beaten egg until well combined.

For the Muffins

  1. Preheat your oven to 190°C (375°F). Grease a 12-cup muffin tin or line with paper liners.
  2. In a large bowl, whisk together the flour and baking powder.
  3. Gently fold the diced jalapeños into the cooled rarebit mixture.
  4. Spoon the rarebit and jalapeño mixture into the muffin cups, filling them about two-thirds full.
  5. Bake for 20-25 minutes, or until the muffins are golden brown and a skewer inserted into the center comes out clean.
