Ingredients

  • 18oz ground pork(Ensure it's finely ground)
  • 7oz chorizo(Cured and finely diced)
  • 1 pc jalapeno(Finely chopped, seeds removed for less heat)
  • 5oz cheddar cheese(Grated)
  • 1 pc egg(Large)
  • 4oz breadcrumbs(Plain, fine)
  • 1 pc onion(Small, finely chopped)
  • 2 tsp garlic(Minced)
  • 1 tsp salt
  • 1/2 tsp black pepper(Freshly ground)
  • 1 tsp paprika(Smoked)

Instructions

Preparation

  1. Preheat your oven to 180°C (350°F). Grease and flour a 12-cup muffin tin.
  2. In a large bowl, combine the ground pork, diced chorizo, chopped jalapeño, grated cheddar cheese, beaten egg, and breadcrumbs.
  3. Add the finely chopped onion, minced garlic, salt, pepper, and smoked paprika to the mixture.
  4. Mix all ingredients thoroughly by hand until well combined. Be careful not to overmix, which can make the leberkäse tough.

Baking

  1. Divide the mixture evenly among the prepared muffin cups, pressing it down gently.
  2. Bake for 30 minutes, or until the Leberkäse muffins are golden brown and cooked through. A meat thermometer inserted into the center should register 71°C (160°F).
  3. Let the muffins cool in the tin for a few minutes before carefully removing them.
