Instructions

Prepare the Fritter Batter

  2. 2Add the finely chopped onion to the skillet with the reserved chorizo fat and sauté until softened, about 3-4 minutes. Add the chopped kale and cook until wilted, another 2-3 minutes. Remove from heat and let cool slightly.
  3. 3In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and black pepper. Whisk well to ensure everything is evenly distributed.
  4. 4Add the lightly beaten eggs, cooked chorizo, cooled kale and onion mixture, and corn to the dry ingredients. Mix until just combined. Be careful not to overmix, as this can lead to tough fritters.

Cook the Fritters

  1. 1Heat about 1/4 to 1/2 inch of vegetable oil in a large non-stick skillet over medium heat until shimmering. To test if the oil is ready, drop a tiny bit of batter in; it should sizzle immediately.
